Semifreddo with Amaretto
Ingredients (4 servings)
  • 1 egg
  • sugar 20 g
  • Amaretti cookies 45 g
  • Amaretto or Baileys 10 ml liqueur
  • salt
  • cream 30-36% 90 ml
  • blueberries or raspberries
  • almond flakes
  • mint
Ingredients for the coating (4 servings)
  • cream 30-36% 50 ml
  • dark chocolate 50
Step 1
Gently separate the protein from the yolk.
Step 2
Beat the yolks with sugar and Amaretto in a water bath. Cook, mixing constantly until the sugar is completely dissolved.
Step 3
Beat the whites with a pinch of salt to stiff foam. Whip the cream in a separate bowl.
Step 4
Crush cookies with a food processor.
Step 5
Combine the whipped cream with the yolk mass and mix. Add crushed cookies. Carefully add whites' foam so that it does not sink.
Step 6
Transfer the mixture to the pastry bag and squeeze it into the mold. Align the surface and put the mold in the freezer for 3-4 hours.
Step 7
Make a glaze. Heat the cream in a water bath and add crushed chocolate to it. Cook, mixing until the ingredients combine well. Set aside to cool. Take the semifreddo out of the freezer and place on a plate. Cover the top with glaze, decorate with fruit, mint and almonds.
