Saltimbocca alla Romana
Ingredients (4 portions)
  • beef tenderloin 640 g
  • 1 sprig of sage
  • prosciutto ham 80 g
  • butter 40 g
  • 3 tablespoons of olive oil
  • wheat flour 30 g
  • salt pepper
  • balsamic sauce
  • olive oil
Ingredients for mashed potatoes (4 portions)
  • potatoes 450 g
  • milk 50 ml
  • butter 65 g
  • salt as desired
  • cream over 30% 20 ml
Step 1

Peel and cook potatoes (approx. 20-25 minutes). Mash the potatoes, then add butter, milk and cream to them. Season as desired and mix to obtain a smooth consistency.
Step 2
Cut the beef tenderloin into pieces of similar thickness, on average about 2 cm.
Step 3
Gently beat the meat.
Step 4
Put a slice of prosciutto on each piece of meat. Place a piece of sage on top and puncture all layers with a toothpick to help hold them together. Sprinkle with flour.
Step 5
Heat oil in a frying pan, then add butter. First, fry the meat on the side with prosciutto, and then on the other. Serve the dish with mashed potatoes. Garnish with balsamic sauce and sage leaves.
