Salad with octopus
Ingredients (4 servings)
tentacle of octopus 800 g
diced cucumber 200 g
diced red onion 100 g
quartered cherry tomatoes 300 g
capers 75 g
chopped parsley 10 g
chopped dill 10 g
8 teaspoons of red wine vinegar
3 teaspoons of olive oil
salt and pepper as desired
Put the octopus in a pot of salted, boiling water and boil it for 10 minutes. Then transfer the tentacle to a bowl with cold ice water.
When the octopus cools down, cut it into slices.
In a large bowl, mix octopus, cucumber, onion, cherry tomatoes and capers.
Add parsley and dill.
Add vinegar and olive oil. Season the salad with salt and pepper.
