Pasta with salmon and zucchini
Ingredients for the dish (4 servings)
squeezed garlic 40 g
chopped shallot 40 g
diced zucchini 160 g
vodka (optional) 100 ml
cream 30-36% 400 ml
sliced salmon 200 g
grated Parmesan cheese 60 g
1 sprig of dill
2 tablespoons salmon caviar
Ingredients for pasta dough (4 servings)
semolina flour 150 g
wheat flour 100 g
Mix wheat flour with semolina.
Put the flour onto a clean surface. Make a hole in the flour and crack the eggs into it.
Using a fork, beat the eggs and gently combine them with the flour.
When the dough becomes less sticky, start kneading the dough until it mixes well.
After kneading the dough, it should be smooth and elastic.
Divide the dough and pass it through a pasta rolling machine until you get the desired thickness and length.
Cut the dough using a pasta cutter. Sprinkle the chopped noodles evenly with flour.
Heat the oil over medium heat. Fry the shallots and garlic, then add the diced zucchini to them.
Add vodka and set it on fire to remove the alcohol content from the dish. (optional step)
Add cream and mix everything well.
Put the pasta in boiling water for 2 minutes or until we reach the desired softness.
Mix the cooked pasta with the sauce. Add salmon and dill. Cook for 1-2 minutes. Season with salt and pepper as desired. Garnish with salmon caviar and grated Parmesan cheese.
