Beef steak in red wine sauce
Ingredients for mashed potatoes (4 servings)
peeled and chopped potatoes 360 g
whole milk 30 ml
cream 30-36% 15 ml
butter 40 g
Ingredients for a red wine sauce (4 servings)
red wine (dry) 200 ml
demi-glace sauce 120 ml
red onion 150 g
butter 40 g
1 sprig of thyme
Ingredients for the dish (4 servings)
beef tenderloin 750 g
3 garlic cloves
2 sprigs thyme
2 sprigs of rosemary
1 tablespoon of butter
Put the chopped potatoes in boiling water and cook for 20-30 minutes until they become soft.
Using a press or masher, mash boiled potatoes.
In a separate pot, heat the milk and cream and then add the potatoes to them. Mix well, add butter and then season with salt and pepper as desired. Set aside.
Set a heat-resistant pan on high heat, heat the oil and put the meat on it. Fry on each side for about 3 minutes until they are evenly browned.
Add garlic, thyme, rosemary and butter.
Use a spoon to pour the melted butter over the meat. Put the pan in the oven preheated to 200 ° C for 3-4 minutes to get medium-rare meat. Set aside for 5 minutes before slicing.
Set the same pan over medium heat and pour the wine into it.
Add demi-glace sauce, chopped red onion, butter and thyme. Season with salt and pepper as desired. Fry slowly until the onion is soft.
Serve the meat with potatoes and red wine sauce.
