Ingredients (4 portions)
  • Digestive biscuits 150 g
  • melted unsalted butter 60 g
  • 1 egg
  • cottage cheese 350 g
  • grains of 1 vanilla pod
  • 2 teaspoons of grated lemon skin
  • sugar 60 g
  • squeezed juice from half of a lemon
  • strawberries 60 g
Step 1
Using a food processor blend biscuits. Add melted butter and start mixing again until you keep the consistency of wet sand. Set aside.
Step 2
Crack the egg in a bowl, add cheese, vanilla grains, lemon zest and sugar. Mix all ingredients until it becomes well combined

Add lemon juice and mix again.
Step 4
Cover the bottom of the pastry rings or forms with aluminum foil.
Step 5
Lay an even layer of biscuits at the bottom of each mold.
Step 6
Put the cheese mass on the bottom of the biscuits. Bake at 140 ° C for 40 minutes. Decorate with sliced strawberries. You can serve cheesecakes hot or chilled.
