Vegetarian Pad Thai
Ingredients for the dish (4 servings)
  • 2 shallots
  • 2 garlic cloves
  • tofu 180 grams (cubes)
  • fresh Shiitake mushrooms 150 g
  • 3 eggs
  • thin chives 60 g
  • bean sprouts 100 g
  • peanuts (chopped) 100 g
  • chilli flakes 1/2 tsp
  • frying oil
Ingredients for Thai sauce
  • palm sugar 100 g
  • Tamarind juice 1/2 cup
  • light soy sauce 4 tbsp
  • dark soy sauce 2 tbsp
  • water 6 tbsp
Step 1
Dissolve palm sugar then mix all ingredients for Thai sauce in a bowl and set aside.
Step 2
Heat oil in a frying pan and fry the shallots with garlic.
Step 3
Add rice noodles and fry for about 1-2 minutes while stirring. Then transfer the pasta to a plate.
Step 4
Heat oil in a frying pan and pour the beaten egg and fry.
Step 5
When the egg is ready, add pre-fried noodles, mushrooms, chopped tofu and Thai sauce. Mix all ingredients in a frying pan and fry for 3 to 5 minutes, stirring constantly.
Step 6
Add sprouts and chopped chives.

Step 7
Serve the pasta with flakes and chilli peppers and chopped peanuts.
